Shrimp Rice Salad

Ingredients
- 1 cup cooked baby shrimp
- 3 cups cooked rice
- 1⁄4 cup sliced celery
- 1⁄4 cup pimento stuffed olive, sliced
- 1⁄4 cup chopped green pepper
- 1⁄4 cup minced onion
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 3 tablespoons mayonnaise
- 1⁄2 cup French dressing
- 2 tomatoes, cut in wedges
Directions
- In a large bowl combine the shrimp, rice, celery, olives, green pepper and onion.
- Stir together salt, pepper, mayo and French dressing.
- Toss with ingredients in bowl.
- Cover and chill.
- To serve, spoon salad onto crisp greens and garnish with tomato wedges.
