Shrimp Curry

Ingredients
- 1 tablespoon butter
- 1 medium onion, diced
- 1 cup carrot, diced
- 1 tablespoon curry powder
- 1 teaspoon oil
- 1 teaspoon mustard seeds
- 1 lb large shrimp
- 1⁄2 cup coconut milk
- 1 cup peas (thawed if frozen) or 1 cup lima beans (thawed if frozen)
- 1⁄2 teaspoon salt
Directions
- Heat butter in skillet.
- Reduce heat, cook onion and carrot.
- Add curry powder and cook 1 minute, stirring. Then remove to a bowl.
- Add oil to skillet, then heat mustard seeds, cook 30 seconds, stirring.
- Add shrimp, cook until opaque, about 4 minutes, stirring frequently.
- Return vegetables to skillet and add remaining ingredients to heat through.
