Shrimp Curry

Ingredients
- 1 tablespoon vegetable oil
- 1 scallion (including tops)
- 1 1⁄2 tablespoons curry powder
- 1 cup coconut milk
- 1 cup chicken broth
- 2 cups sweet potatoes or 2 cups white potatoes
- 3⁄4 lb large shrimp, cleaned
- 2 teaspoons lime juice
- 1 cup green peas
- 2 tablespoons chopped fresh cilantro
Directions
- In skillet, heat oil until hot.
- Saute scallion, about 1 minute. Stir in curry.
- Whisk in coconut milk and broth; bring to a simmer.
- Add potatoes; cook, partially covered until tender, about 10 minutes.
- Add shrimp, lime juice, peas and chopped cilantro.
- Simmer until shrimp are opaque and cooked through, about 3 minutes.
- Serve with rice or whatever you desire.
