Shrimp Creole

Ingredients
- 1 cup chopped onion
- 3 garlic cloves, minced
- 1⁄2 cup chopped celery
- 1⁄2 cup chopped bell pepper
- 1⁄3 cup butter
- 1⁄2 cup vegetable oil
- 1⁄2 cup flour
- 1 bay leaf
- 1 1⁄2 tablespoons lemon juice
- 0.5 (6 ounce) a can tomato paste
- 1 (10 ounce) can diced tomatoes and green chilies
- 1 1⁄2 teaspoons Worcestershire sauce
- 2 lbs shrimp, peeled and deveined
- salt and pepper
- hot sauce
Directions
- Saute onion, celery, garlic,and bell pepper in butter until onion is translucent.
- In heavy skillet, make a roux from oil and flour.
- Cook over medium heat until golden brown.
- Stir in sauteed vegetables, bay leaf, lemon juice, tomatoe paste, tomatoes, Worcestershire and shrimp.
- Add water just to cover mixture.
- Cook over medium heat untl shrimp are pink and tender; strirring occasionally.
