Shrimp Cocktail-Mexican Style

I got this recipe from a friend that tried something similar in a restaurant on South Padre island.

Ready In: 2 hrs 15 mins

Serves: 4-6

Yields: 8 cups

Ingredients

  • 2  lbs  cooked shrimp, peeled and deveined
  • 1  tablespoon  crushed garlic
  • 12 cup  finely chopped red onion
  • 14 cup fresh cilantro
  • 1 12 cups  Clamato juice
  • 14 cup ketchup
  • 14 cup fresh lime juice
  • 1  serrano pepper, finely minced
  • 14 cup  prepared horseradish
  •  salt
  • 1  ripe avocado, peeled, pitted and chopped

Directions

  1. Place shrimp in a large bowl.
  2. Stir in garlic, red onion and cilantro.
  3. Mix in Clamato, ketchup, lime juice, minced serrano and horseradish.
  4. Season with salt.
  5. Cover and refrigerate 2-3 hours.
  6. Stir in avocado when ready to serve so it doesn't get too mushy.
