Shrimp & Asparagus Casserole

Ingredients
- 1⁄4 cup butter
- 1⁄4 cup all-purpose flour
- 1 cup milk
- 3⁄4 cup light cream
- 1⁄4 cup chicken broth
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 egg yolk, slightly beaten
- 1⁄2 cup grated parmesan cheese
- 1 lb cooked small shrimp
- 2 (10 ounce) packages frozen asparagus cuts, thawed and drained
- 1⁄2 cup breadcrumbs
Directions
- Preheat oven to 350 degrees.
- In a medium saucepan, melt butter. Stir in flour, cook, stirring constantly, for 1 minute.
- Gradually whisk in milk and cream, cook until thickened. Stir in broth, Season with salt and pepper.
- Stir in egg yolk, cheese and shrimp. In a greased 2 1/2 quart casserole dish, arrange half of the asparagus, spread with half the shrimp mixture. Repeat layers.
- Top with bread crumbs.
- Bake for 30 minutes.
