Shrimp and Apple Curry With Golden Raisins

Ingredients
- 1 tablespoon butter
- 1 cup chopped peeled granny smith apple
- 3⁄4 cup chopped shallot
- 2⁄3 cup chopped celery
- 1 teaspoon minced garlic
- 2 tablespoons all-purpose flour
- 1 tablespoon curry powder
- 1 1⁄3 cups 2% low-fat milk
- 1⁄2 cup golden raisin
- 1 (15 3/4ounce) fat free chicken broth
- 1 1⁄2 lbs large shrimp, peeled and deveined
- 1⁄4 teaspoon salt (to taste)
- 1⁄4 teaspoon fresh ground black pepper
Directions
- Melt butter in a large nonstick skillet over medium-high heat.
- Add in apple and the next 3 ingredients; stir/saute for 5 minutes or until lightly browned.
- Stir in flour and curry powder; cook and stir for 1 minute.
- Gradually add in milk, raisins, and broth, stirring constantly using a whisk.
- Bring to a boil, stirring frequently.
- Lower heat and simmer for about 5 minutes or until thick.
- Stir in shrimp, salt, and pepper; cook 3 minutes or until shrimp are done.
