Hard cooked eggs marinated in soy sauce

Serves: 3

Ingredients

  • 6  eggs
  • 34 cup soy sauce
  • 3  tablespoons  rice wine vinegar
  • 1  tablespoon sugar

Directions

  1. Combine soy sauce, vinegar, and sugar. Microwave for 30 seconds and stir to dissolve the sugar.
  2. Put the eggs in a pot of water and bring to a boil. Turn off the heat, let sit for 6 minutes.
  3. Take eggs out of the pot and put them in an ice water bath, until they are cool to the touch.
  4. Peel the eggs and put them in a zip-lock bag with the soy marinade.
  5. Marinade for 12 hours, rolling the eggs around occasional for uniform coverage.
  6. Note: the yokes should come out glossy. If you want your yolks firmer, leave in the pot for up to 15 minutes. The Marinade can be used several times, keep in a jar in the fridge.
