Sharp Cheese Pastry ( for Apple Pie)

This is a recipe I found in an old cookbook. You must make your next apple pie and use this crust! Oh, sooo good! Note: Chill time is NOT included in prep time. This makes your bottom and top crust. Show more

Yields: 2 pie crust

  1. Sift together the flour and salt.
  2. Stir in grated sharp cheese.
  3. Cut in cold butter.
  4. Slowly add ice water and mix lightly with a fork.
  5. Divide into 2 balls.
  6. Chill at least 25 minutes.
  7. Sprinkle some flour on flat surface.
  8. Roll first ball of dough out slightly thinner than the regular plain pie pastry.
  9. Line 9-inch Pyrex pie plate with this crust.
  10. Dot with 2 tablespoons butter, cut up.
  11. Fill with your choice of apple pie filling.
  12. Sprinkle more flour and roll out second ball of dough.
  13. Cover filled pie with the second pie crust.
  14. Crimp pie crust.
  15. Bake in preheated 450 degree oven 10 minutes.
  16. Reduce heat to 350 degrees and bake about 40 minutes more.
