Sharp Cheese Pastry ( for Apple Pie)

Yields: 2 pie crust
Ingredients
- 2 cups enriched flour
- 1⁄2 teaspoon salt
- 1⁄2 cup sharp cheddar cheese, grated
- 2⁄3 cup cold butter
- 4 -5 tablespoons ice water
Directions
- Sift together the flour and salt.
- Stir in grated sharp cheese.
- Cut in cold butter.
- Slowly add ice water and mix lightly with a fork.
- Divide into 2 balls.
- Chill at least 25 minutes.
- Sprinkle some flour on flat surface.
- Roll first ball of dough out slightly thinner than the regular plain pie pastry.
- Line 9-inch Pyrex pie plate with this crust.
- Dot with 2 tablespoons butter, cut up.
- Fill with your choice of apple pie filling.
- Sprinkle more flour and roll out second ball of dough.
- Cover filled pie with the second pie crust.
- Crimp pie crust.
- Bake in preheated 450 degree oven 10 minutes.
- Reduce heat to 350 degrees and bake about 40 minutes more.
