Seven-Layer Casserole

Ingredients
- 1 cup uncooked rice
- 1 cup corn, drained if canned
- 1 (15 ounce) can tomato sauce, divided
- 1 1⁄4 cups water, divided
- 1⁄4 cup finely chopped onion
- 1⁄4 cup finely chopped green pepper
- 1 lb ground beef or 1 lb ground turkey, uncooked
- salt and pepper
- 4 slices bacon, cut in half, uncooked
Directions
- In a two-quart casserole, with a tight-fitting lid, make layers of each of these ingredients:.
- 1. Rice.
- 2. Corn.
- 3. Salt and pepper and half the can of tomato sauce, plus 3/4 cup water.
- 4. Onion and green pepper.
- 5. Ground beef or turkey.
- 6. Salt and pepper, the remaining half of the tomato sauce and 1/2 cup water.
- 7. Bacon.
- Cover and bake in a preheated 350-degree oven for 1 hour. Uncover and bake about 30 additional minutes or until the bacon is crisp.
