Sesame Peanut Noodles

Ingredients
- 1 lb linguine (see note)
- 3⁄4 cup peanut dipping sauce (see recipe)
- 1 1⁄2 tablespoons toasted sesame oil (should be brown in color)
- 1 1⁄2 cups snow peas, thinly sliced at a slant (on a bias)
- 1 cup cilantro leaf
- 1⁄2 cup scallion top, thinly sliced at a slant (on a bias)
- 2 tablespoons sesame seeds, toasted
- 1 lime, cut into wedges for serving
Peanut dipping sauce
- 2 tablespoons vegetable oil
- 1 tablespoon garlic and red chile paste
- 1⁄3 cup creamy peanut butter
- 1⁄4 cup hoisin sauce
- 1 tablespoon rice wine vinegar
- 2 tablespoons low sodium soy sauce
Directions
- Cook pasta according to package directions; drain and place in a large bowl.
- Combine Peanut Dipping Sauce with sesame oil and stir well. Add sauce to warm pasta; toss to combine. Let noodles cool slightly.
- Add snow peas, cilantro, scallion greens, and sesame seeds to pasta. Toss to incorporate. Serve room temperature or chilled with a lime wedge.
- Note:. Rice noodles are too fine to handle this sauce, so stick with a wheat flour noodle or try a buckwheat noodle.
