Sesame Noodles With Ginger and Scallions

  1. mix dressing and set aside.
  2. cook noodles until tender (about 8 minutes), rinse, and drain.
  3. heat wok or heavy skillet over high heat.
  4. add oil and heat about 15 seconds.
  5. add ginger and scallion whites, stir about 20 seconds.
  6. add greens, rice wine, and bean sprouts.
  7. toss lightly about 1 minute.
  8. add cooked noodles and dressing and continue tossing until noodles are fully heated.
  9. add sesame seeds.
  10. dress with a few more sesame seeds and some uncooked scallion greens.
  11. good hot or chilled.
