Sesame Miso Instant Noodles With Chicken

Ingredients
- 1⁄2 teaspoon grated fresh ginger
- 2 teaspoons miso
- 2 teaspoons chicken bouillon
- 1 tablespoon tahini or 1 tablespoon peanut butter
- 1 teaspoon toasted sesame seeds
- 1 teaspoon soy sauce
- 1⁄4 cup shredded carrot
- 1⁄4 cup sliced mushrooms (enoki works great)
- 1⁄2 cup roughly torn fresh spinach leaves
- 1 small nest vermicelli rice noodles
- 1⁄4 cup minced fresh scallions
- 2 tablespoons cooked chicken, thinly sliced
Directions
- Combine ginger, miso, chicken bouillon, tahini, sesame seeds and soy sauce into a 500 ml glass jar; mix thorougly.
- Stuff remaining ingredients in the jar and seal tight.
- When ready to eat, add boiling water to the top and let sit with the lid on for 5 minutes before eating.
