Sesame Dressing

Yields: 1/2 cup (approx)
Ingredients
- 3 tablespoons tahini
- 1⁄2 lemon, juice
- 1 tablespoon soy sauce
- 1 teaspoon ginger, finely grated
- 1 garlic clove, finely minced
- 2 tablespoons sesame seeds, toasted
- 2 tablespoons parsley or 2 tablespoons cilantro, finely chopped
Directions
- In a pestle and mortar, pound the tahini, lemon juice, soy, ginger and garlic (or blitz them in a blender). Thin with about 5 tbs of hot water, or as much as is needed to get the mix to the consistency of heavy cream.
- Now either stir in the sesame seeds and parsley or cilantro and use within a couple of hours, or store for a few days, sealed in a jar in the fridge, and add the sesame and herbs an hour or so before serving.
