Sensational Spudnuts

Yields: 24 spudnuts
Ingredients
- 2 tablespoons quick-rising yeast
- 4 cups milk, scalded
- 1 1⁄2 teaspoons salt
- 1 cup margarine, melted
- 5 eggs
- 1 cup sugar
- 2 cups mashed potatoes
- 2 -3 teaspoons nutmeg
- 2 1⁄2 cups flour
icing
- 1 lb icing sugar
- 2 tablespoons margarine
- 1⁄8 cup hot water
Directions
- mix together first 8 ingredients stir well, add enough flour to form a soft dough.
- let rise until double the size then knead and roll out to 1/2 inch thick. Cut like doughnuts and let rise again. Deep fry until golden brown.
- Glaze:
- Mix together icing sugar margarine and add enough water to make a runny glaze, dip spudnuts in and set to cool.
- •Or shake spudnuts in a bag of 1 cup of white sugar and 1/2 cup of brown sugar.
