Self Basting Ham Loaf

Pennsylvania Dutch delicacy my husband grew up eating this in the PA Coal Region, I did not. I am posting this recipe at his request

Ingredients

• 1 1⁄2 lbs ground pork
• 1 1⁄2 lbs  ground cooked ham
• 1⁄2 cup  breadcrumbs
• 1  small yellow onion, chopped (optional)
• 1⁄2 teaspoon white pepper or 1⁄2 teaspoon ground black pepper
• 1  cup brown sugar
• 1 (8 ounce) can crushed pineapple with juice, partially drained
• 1⁄4 cup mustard (I use spicy brown)

Directions

1. Prehat oven to 350 degrees.
2. Spray a cooke sheet with cooking spray.
3. In a large bowl mix all of the loaf ingredients well.
4. Shape into a loaf on cookie sheet.
5. Bake@ 350 degrees for 1 1/2 hours.
