Secretly Simple Zucchini Bread

Ingredients
- 2 eggs
- 1⁄2 cup vegetable oil
- 1 cup white sugar
- 1 cup grated zucchini
- 1 teaspoon vanilla extract
- 1 1⁄2 cups all-purpose flour
- 1 1⁄2 teaspoons ground cinnamon
- 1⁄2 teaspoon baking soda
- 1⁄8 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup chopped walnuts (optional)
- 1 ounce grated semisweet chocolate (optional)
Directions
- Preheat oven to 325 degrees F.
- Grease and flour 1 8x4 inch loaf pan.
- In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Next, stir in zucchini and vanilla.
- Combine flour, cinnamon, soda, baking powder, salt and; stir into the egg mixture. By hand, mix in nuts and grated chocolate if desired.
- Pour batter into prepared pan.
- Bake for 60 to 70 minutes, or until done.
