Sea Bean Chowder

Serves: 4-6
Ingredients
- 3 cups dried beans or 3 cups canned beans
- 2 cups onions, chopped
- 6 garlic cloves, minced
- 1 (32 ounce) container Clamato juice
- 1 cup white wine or 1 cup sherry wine
- 1 bay leaf
- 1⁄2 teaspoon thyme
- 2 tablespoons parsley, chopped or 2 teaspoons dried parsley
- 1⁄4 cup fennel, chopped or 1⁄2 teaspoon crushed fennel seed
- salt & pepper
- 1 (16 ounce) jar salsa, chunky style
- 1 (10 ounce) jar baby clams, whole
- 1 lb shrimp, briefly cooked and shelled
Directions
- Cook dried beans.
- Saute onion in oil.
- Add Clamato juice, wine and all seasonings.
- Simmer Simmer for a long time.
- Add beans.
- 15 minutes before serving add shrim and undrained clams.
