Scrumptious Vegetable Chili

Serves: 14-16
Ingredients
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 onion, chopped (I USE 2 16 OUNCE BAGS FROZEN BIRDSEYE PEPPER STIR FRY INSTEAD)
- 1 tablespoon minced garlic
- 1 1⁄2 tablespoons hot sauce, i use tabasco
- 1⁄2 teaspoon ground thyme
- 1 1⁄2 tablespoons oregano, in my house this is optional
- 1 1⁄2 teaspoons ground cumin
- 1 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 1 (19 ounce) can cannellini beans, undrained
- 1 (19 ounce) can black beans, undrained
- 1 (19 ounce) can kidney beans, undrained
- 2 (28 ounce) cans whole tomatoes, undrained and chopped
Directions
- Mix all ingredients together in a crock pot.
- Cook on low 6-8 hours.
