Scott's Finger Lickin Good Lasagna

Ingredients
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 2 cups chopped onions
- 1 cup chopped celery
- 1 1⁄2 cups green peppers
- 2 lbs ground turkey
- 1 (15 ounce) can tomato paste
- 1 (14 1/2ounce) can chopped tomatoes
- 4 teaspoons oregano
- 2 teaspoons basil
- 1⁄2 teaspoon salt
- 6 whole wheat lasagna noodles
- 2 cups 1% cottage cheese
- 2 cups reduced-fat mozzarella cheese
Directions
- Heat the oil in a large skillet and saute the garlic, onion, celery, bell pepper, and turkey.
- Once the turkey is browned, drain off any fat/liquids.
- Add the tomato paste, tomatoes, and seasonings and allow to simmer.
- Heat the oven to 350 degrees F.
- In a rectangular baking dish sprayed with nonstick cooking spray, make a layer of noodles, cottage cheese, sauce, and mozzarella cheese
- Repeat to make two layers (one cup of mozzarella cheese over each layer).
- Bake for 45 minutes.
