Scottish Skirlie

Ingredients
- 1⁄4 cup dripping
- 1 large onion, peeled and finely chopped
- 2⁄3 cup old-fashioned oatmeal
- salt and pepper
- mashed potatoes
Directions
- Melt the drippings. Add onion and fry slowly, stirring occasionally until evenly brown. Stir in enough oatmeal to absorb the fat. Add seasoning and cook for about 10-15 minutes until throughly cooked.
- Serve with mashed potatoes. Uncooked, it can be used as a stuffing for chicken.
