Schnitz and Knepp

This dish is a wonderful warm dish in the wintertime and one of my favorite comfort foods.

  1. Cover apples with boiling water and let stand until cool. Drain.
  2. Trim excess fat from ham.
  3. Place in Dutch oven and add chicken broth and water.
  4. Bring to boil.
  5. Reduce heat and simmer 90 minutes or until tender.
  6. Remove ham and skim fat from broth.
  7. Slice and cube ham and return it to the Dutch oven.
  8. Add apples and brown sugar.
  9. Bring to boil, stirring to dissolve sugar.
  10. Reduce heat and simmer 15-20 minutes.
  11. Make dumplings by combining flour with baking powder and salt.
  12. Cut into butter to resemble coarse corn meal.
  13. Add milk and beat vigorously until smooth.
  14. Drop 6 or 8 spoonfuls into simmering broth.
  15. Cover tightly and simmer 10 minutes.
  16. To serve, remove dumplings with slotted spoon.
  17. Pour ham and apple mixture around dumplings.
