Scandinavian Egg Salad

Ingredients
- 1⁄4 cup mayonnaise
- 1 -2 teaspoon curry powder
- 1 tablespoon fresh lemon juice
- 5 large caperberries, stemmed and finely sliced
- 4 hard-boiled eggs, chopped
- kosher salt & freshly ground black pepper
- 1 tablespoon fresh chives, finely chopped
Directions
- In a large bowl, whisk together mayonnaise, curry powder, and lemon juice; stir in the sliced caperberries, then fold in the eggs.
- Season with about 1/4 teaspoon salt and 1/8 teaspoon pepper, or to taste.
- Garnish with chives.
