Scandi-Style Open Sandwiches

Ingredients
- 2 tablespoons low-fat cream cheese
- 1 tablespoon creamed horseradish
- 2 slices rye bread or 2 slices pumpernickel bread
- 6 -8 slices avocados
- 4 -6 slices smoked salmon or 4 -6 slices gravadlax salmon
- 1⁄4 cup chives
- 1 lemon wedge
Directions
- Mix the low-fat cream cheese with the creamed horseradish and season; with salt (be careful the lox may be very salty), pepper & some of the chives.
- Spread 2 slices of rye bread or pumpernickel with the cheese then add slices of avocado and some smoked salmon or gravadlax.
- Sprinkle with remaining chives and pack a lemon wedge to squeeze over.
