Scallops Sweetheart for 2

  1. With a cleaver, flatten scallops.
  2. Dip scallops in milk and roll in flour to coat.
  3. Saute in olive oil for about 2 minutes.
  4. Transfer scallops to a plate and add the wine to the skillet.
  5. Place scallions, shallots and parsley in the pan with the wine and simmer for a minute or so and pour over the scallops.
  6. Season with lemon juice and pepper.
