Scalloped Potatoes Jarlsberg

Ingredients

  • 1  cup leek, chopped
  • 14 cup butter (1/2 stick) or 14 cup margarine (1/2 stick)
  • 14 cup all-purpose flour
  • 1 12 teaspoons salt
  • 18 teaspoon pepper
  • 2  cups milk
  • 8  cups  sliced  red potatoes, , unpeeled
  • 2  cups  jarlsberg cheese, shredded
  • 34 cup  breadcrumbs
  • 14 cup butter or 14 cup margarine, melted

Directions

  1. In saucepan, cook leeks in 1/4 cup butter until tender.
  2. Stir in flour, salt and pepper.
  3. Gradually stir in milk.
  4. Cook, stirring constantly, until thickened.
  5. In 2-quart buttered baking dish, layer half of the potatoes, half of the leek sauce and half of the cheese.
  6. Repeat layers.
  7. Bake, covered, at 375°F for 45 minutes.
  8. Uncover.
  9. Blend bread crumbs and 1/4 cup melted butter.
  10. Sprinkle around edge of casserole.
  11. Bake 15 minutes longer.
