Scalloped Corn Casserole

Ingredients
- 1 (15 ounce) can creamed corn
- 2 eggs
- 1⁄2 cup saltine crackers
- 1⁄4 cup butter
- 1⁄4 cup evaporated milk
- 1⁄4 cup carrot, shredded
- 1⁄4 cup bell pepper, chopped
- 1 tablespoon celery
- 1 teaspoon onion
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon sugar
- 1⁄2 cup shredded cheddar cheese
Directions
- combine first 11 ingredients in a bowl.
- mix and pour into greased 1 qt baking dish.
- sprinkle cheese on top. bake at 350° for 35 min.
