Savory Rice Pilaf

Ingredients
- 2 cups long grain white rice
- 1 tablespoon olive oil
- 4 cups chicken stock
- 1⁄2 cup apple juice
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 teaspoons lemon juice
- 1⁄2 teaspoon dried thyme
Directions
- In a large saucepan, combine the rice and oil. Stir over medium heat until the rice is golden brown, about 5 minutes.
- Add the stock, apple juice, onions, garlic, lemon juice and thyme.
- Bring to a boil. Reduce heat to low, cover the pan, and simmer until all the liquid has been absorbed and the rice is tender, about 20 minutes.
- Fluff with a fork before serving.
