Savory Pumpkin Soup With Spice Shake

  1. SAUTE ONION AND BELL PEPPER:
  2. Heat ¼ cup of oil in a large saucepan over medium-high heat. Add onion and bell pepper to the saucepan. Season to taste with salt and pepper and cook for 8 to 10 minutes until the onion is soft.
  3. ADD GARLIC, CHILI POWDER AND OREGANO:
  4. Add 2 chopped cloves of garlic, 1 tablespoon of chili powder and 2 teaspoons of oregano. Cook, while stirring, for about 30 seconds until fragrant.
  5. ADD PUMPKIN PUREE AND BROTH:
  6. Mix in 2 cans of pumpkin puree and 2 quarts of broth. Cook for 25 - 30 minutes, stirring occasionally until the soup thickens.
  7. PUREE THE SOUP:
  8. Puree the soup in batches in a blender or using an immersion blender. Taste and adjust seasoning to taste.
  9. MAKE THE SPICE SHAKE:
  10. In a small pan, over low heat, cook 2 tablespoons each of whole cumin seeds, whole fennel seeds and whole coriander seeds. Once fragrant, transfer to a small bowl. Add 1 cup of toasted pepitas, 2 teaspoons of crushed red pepper and 1 teaspoon of kosher salt.
  11. SERVE:
  12. Stir in lime juice just before serving with spice shake sprinkled on top.
