Savory Pasta Shells W/ Creamy Crab Filling

Yields: 12 pasta shells
Ingredients
- 1 cup chopped onion
- 1 garlic clove, minced
- 1 tablespoon butter
- 2 cups cottage cheese
- 1⁄4 cup white wine
- 2 tablespoons fresh basil, chopped
- 1 cup cooked crab
- salt and pepper
- 12 jumbo pasta shells, cooked
- 2 cups roma tomatoes, peeled, seeded and diced
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1⁄3 cup white wine
- salt and pepper
- 3 tablespoons basil, chopped
Directions
- Preheat oven to 350* For shells, saute onion and garlic in butter until tender but not brown; stir in cottage cheese, wine, basil, crab and seasonings. Spoon 2 or 3 Tblsp. of mixture into each shell. Place in buttered baking dish. Bake 20 minutes. Serve warm with the following warm sauce: Saute tomatoes and garlic in oil about 5 minutes; add wine and simmer until liquid has about evaporated. Season to taste; sprinkle with basil just before serving.
