Savory Mushroom and Barley Soup

Serves: 4-6
Ingredients
- 3 cups water
- 1 (14 ounce) can diced tomatoes
- 3⁄4 cup chopped onion
- 3⁄4 cup chopped celery
- 3⁄4 cup chopped carrot
- 1 teaspoon dried savory
- 3⁄4 teaspoon crushed fennel seed
- 2 cups sliced mushrooms
- 1⁄2 cup quick-cooking barley
- salt and pepper
Directions
- Combine all ingredients except barley, salt and pepper in slow cooker.
- Cover and cook on high 4-6 hours, adding barley during the last 30 minutes. Season to taste with salt and pepper.
- Variation: add 2-3 cloves sliced garlic, omit barley and add 3 cups torn kale during last 15 minutes of cooking.
- Variation: add 2 cloves minced garlic, 1-2 tablespoons maple syrup and 1 15 oz can white beans, omit barley.
