Sauteed Yellow Squash with onion (for 1 or 2)

Very nice and crispy. I sometimes add a few mushrooms.

Ready In: 10 mins

Serves: 1

Ingredients

  • 1  medium  yellow squash, sliced into 1/4 inches,look for good colour
  • 1  small yellow onion, sliced
  • 14 cup  vegetable oil
  •  oregano
  •  white wine

Directions

  1. Place oil in saute pan over medium heat.
  2. Add squash and onion.
  3. Cook and stir until crisp and tender for about 5 minutes.
  4. Sprinkle with whole oregano and a splash of white wine.
  5. Depending on how you like it, I use about half the amount of oil called for, 1/4 cup is too much for us.
