Sauteed Green Beans With Red Peppers

Ingredients
- 1 1⁄2 lbs green beans (cut off ends and leave whole)
- 1⁄4 cup olive oil
- 1 garlic clove, pressed
- 1⁄4 cup chopped onion
- 3⁄4 cup diced red pepper
- 1 teaspoon dried basil (if using fresh basil, use 2 tsp)
- 1 teaspoon salt
- 1⁄4 cup boiling water
- 1⁄2 cup parmesan cheese
Directions
- Heat oil and saute garlic, onion and peppers, slowly, about 3 minutes.
- Add beans, basil, salt and the 1/4 cup boiling water. Cover and simmer about 15 minutes.
- Stir in half the parmesan cheese.
- Put in a serving dish and add the rest of the cheese on top.
