- Trim the stems from the buds.
- Rinse in cold water and pat dry on paper towels.
- In a skillet, melt butter and saute scallions for 2 to 3 minutes.
- Add buds, parsley, oregano (or tarragon), salt and pepper.
- Saute and stir for 5 minutes, just until tender.
