Sautéed Zucchini With Garlic, Chili and Basil

Ingredients
- 3 large zucchini
- 2 tablespoons olive oil
- 3 clove garlic, finely chopped
- 1 red chili pepper, deseeded and finely chopped
- 12 leaves basil, finely sliced
- salt and freshly ground black pepper
- 4 tablespoons parmesan cheese, freshly grated
Directions
- Cut the zucchini into slices at a slight angle.
- Heat the olive oil in a large frying pan and fry the zucchini slices for about 2 minutes.
- Add the garlic and chili and fry a further minute.
- Sprinkle in the basil, season well with salt and freshly ground black pepper.
- Transfer the zucchini to a warmed serving dish and scatter over the grated Parmesan. Serve immediately.
