Sautéed Spinach and Red Peppers

Ingredients
- 2 teaspoons olive oil
- 1 small red onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, cut into 1/2 inch dice
- 8 cups fresh spinach
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon sugar
Directions
- In a large skillet, heat the oil over moderate heat.
- Add the onion and garlic and sauté for 5 minutes.
- Add the bell pepper and sauté for 3 minutes.
- Add the spinach, sprinkle with the salt and sugar and cook, turning for 4 minutes or until the spinach is wilted.
