Sausage Quiche

Ingredients
- 1⁄2 lb roll of pork sausage
- 1 medium onion, chopped (optional)
- 1 unbaked prepared 9 inch pie shell
- 1⁄2 cup shredded swiss cheese
- 4 eggs
- 1 cup half-and-half
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
Directions
- Preheat oven to 425°F
- Cook and crumble sausage and onion until sausage is browned.
- Cover bottom of pie crust with mixture and top with cheese.
- In medium mixing bowl. Beat eggs and add half and half, salt and pepper.
- Pour over sausage mixture.
- Bake 15 minutes. Reduce oven to 350 F and continue cooking for 20 minutes or until set. Let stand 5 minutes then cut into wedges.
