Sausage, Kale, and Potato Soup

This was phenomenal and so fast and easy. I doubed the recipe, but will post as written. I used spinach so I put it in at the very end after everything was cooked and just about ready to serve (I didn't want it to wilt). Nobody even noticed it was made with coconut milk.   1. Turn instant pot to saute and add the oil. Add the sausage and onion and saute for 3 minutes and then hit the cancel button.
  2. Put the rest of the ingredients in the instant pot. Seal the lid and close the steam valve. Turn to pressure mode and set time to 10 minutes. When the timer goes off, do a quick release of the steam. You may want to add salt and pepper at this point (I did not--I left it to individuals).
  3. Enjoy!
