Sausage, Kale, and Potato Soup

Ingredients
- 1 tablespoon avocado oil or 1 tablespoon olive oil or 1 tablespoon ghee
- 12 ounces kielbasa
- 1 cup yellow onion, diced
- 2 garlic cloves, minced
- 2 lbs red potatoes, cubed
- 2 cups kale, chopped
- 14 1⁄2 ounces full fat coconut milk
- 3 cups chicken broth
- 1 1⁄2 teaspoons salt
- 1⁄4 teaspoon crushed red pepper flakes
Directions
- Turn instant pot to saute and add the oil. Add the sausage and onion and saute for 3 minutes and then hit the cancel button.
- Put the rest of the ingredients in the instant pot. Seal the lid and close the steam valve. Turn to pressure mode and set time to 10 minutes. When the timer goes off, do a quick release of the steam. You may want to add salt and pepper at this point (I did not--I left it to individuals).
