Sausage Frittata

Ingredients
- 400 g beef chipolata sausages
- 1 medium red onion, finely chopped
- cooking spray
- 50 g salami, cut into 2cm pieces
- 1 medium red capsicum, chopped finely
- 8 eggs
- 1⁄2 cup cream
- 1⁄2 cup tasty cheese, coarsely grated
- 1⁄2 cup flat leaf parsley, chopped
Directions
- Preheat oven to 200°C Lightly grease a 6 cup square casserole dish.
- Heat a large frying pan over moderate heat. Cook and turn chipolatas for 4-5 minutes or until cooked. Drain on paper towels. Spray onion with oil. Add to pan. Cook and stir for 3 minutes. Add salami and casicum, cook for 4 minutes more or until vegies soften. Transfer to a medium bowl, let cool.
- Whisk egg, cream, cheese and parsley in a large jug. Stir into onion mixture. Pour into prepared dish. Top with chipolatas. Bake, uncovered, for 30-35 minutes or until mixture is set.
- To serve, cut frittata into slices.
