Sausage Frittata

This yummy frittata is a hit with the kids, and it's simple to make! It's also a great budget meal, at just $2.10 a serve. Chipolatasare small sausges. Ingredients

  • 400  g  beef  chipolata sausages
  • 1  medium red onion, finely chopped
  •  cooking spray
  • 50  g  salami, cut into 2cm pieces
  • 1  medium red capsicum, chopped finely
  • 8  eggs
  • 12 cup  cream
  • 12 cup  tasty cheese, coarsely grated
  • 12 cup flat leaf parsley, chopped

Directions

  1. Preheat oven to 200°C Lightly grease a 6 cup square casserole dish.
  2. Heat a large frying pan over moderate heat. Cook and turn chipolatas for 4-5 minutes or until cooked. Drain on paper towels. Spray onion with oil. Add to pan. Cook and stir for 3 minutes. Add salami and casicum, cook for 4 minutes more or until vegies soften. Transfer to a medium bowl, let cool.
  3. Whisk egg, cream, cheese and parsley in a large jug. Stir into onion mixture. Pour into prepared dish. Top with chipolatas. Bake, uncovered, for 30-35 minutes or until mixture is set.
  4. To serve, cut frittata into slices.
