Sausage Cornbread Bake

Ingredients
- 1 lb turkey sausage (breakfast sausage)
- 1 large onion, diced
- 1 bell pepper
- 1⁄2 cup egg substitute
- 1 1⁄2 cups self-rising cornmeal, mix
- 1 (17 ounce) can cream-style corn
- 3⁄4 cup milk
- 1⁄4 cup oil
- 8 ounces cheddar cheese, shredded
Directions
- Heat oven to 425°F Grease 10" ovenproof skillet or 2 quart baking dish. Brown sausage in medium skillet; set aside. Sautee bell pepper and onion in sausage grease until crisp-tender. Add browned sausage to pepper and onion.
- In large bowl, combine eggs, corn meal mix, corn, milk and oil. Pour half of corn meal mixture into greased baking dish.; sprinkle with sausage mixture and cheese. Pour remaining corn bread batter over top.
- Bake at 425 F for 30-40 minutes until golden brown on top. Let stand 10 minutes before serving.
