Sausage Casserole (Oamc)

This casserole will freeze for up to one month once cooked and cooled. Defrost and reheat in a medium oven, covered, for 20-30 minutes. Serve with garlic bread.

Ingredients

• 8  sausages
• 1  yellow pepper, deseeded and chopped
• 4  red onions, peeled and cut into wedges
• 14  ounces chopped tomatoes
• 1  cup vegetable broth
• 1  tablespoon sugar
•  basil, to garnish

Directions

1. Heat the oven to 425°F.
2. Put the sausages, pepper and onion into a roasting tin and roast for 20 minutes.
3. Lower the oven temp to 400F then tip the tomatoes and broth over the sausages. Add the sugar, season and stir well.
4. Roast for a further 20 minutes.
5. Serve with garlic bread.
