Sausage and Tomato Rigatoni

Ingredients
- 4 cups rigatoni pasta, uncooked (or other tube pasta)
- 1 lb Italian sausage, cut into chunks
- 1 red onion, sliced
- 1⁄4 cup tomato paste
- 1⁄4 cup sun-dried tomato dressing
- 1⁄4 cup fresh parsley, chopped (optional)
- 1⁄4 cup parmesan cheese, grated (optional)
Directions
- Cook pasta as directed on package.
- While pasta is cooking, brown sausage in large nonstick skillet; drain. Stir in onions and tomato paste; cover.
- Cook 15 minute or until onions are tender and sausage is cooked through, stirring occasionally. Stir in dressing.
- Toss the sausage mixture with pasta.
- Sprinkle with parsley and cheese.
- Serving suggestion -- if you want this really cheesy, put into a baking dish and top with mozzarella cheese and throw into the oven for a few minutes until cheese is melty.
