Sausage and Cheese Kolaches

Ingredients

  • 2  tablespoons  yeast
  • 2  teaspoons  yeast
  • 1 14 cups warm water
  • 1 78 lbs flour
  • 12 cup  nonfat dry milk powder
  • 2  tablespoons sugar
  • 2  teaspoons sugar
  • 1  tablespoon salt
  • 14 cup  vegetable oil
  • 25  sausage links (Knockwurst)
  • 25  slices American cheese
  • 14 lb margarine

Directions

  1. Dissolve dry yeast in warm water. Let stand for (4-5) minutes.
  2. Place all dry ingredients (flour, dry milk, sugar and salt) in mixer bowl.
  3. Using a dough hook, blend on low speed for approximately (2) minutes.
  4. Add oil and blend on low speed for approximately (2) minutes.
  5. Add water. Mix on low speed for (1) minute.
  6. Mix dough on medium speed for (8) minutes, or until dough is smooth and elastic.
  7. Place dough in warm area (about 90°F) until doubled in size.
  8. Punch down dough to remove air bubbles.
  9. Cut 2" rolls (2 oz). Flatten with hand to make dough spread; place a sausage link and 1 slice of cheese in center of dough and fold over to close in sausage and cheese.
  10. Bake at 350°F until lightly browned. (Oven temperatures may vary).
