Sausage and Beans

Yields: 10 cups
Ingredients
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 1 garlic clove, minced
- 1 tablespoon vegetable oil
- 1⁄2 lb fully cooked sausage, cut into 1/4 inch slices
- 4 cups chicken broth, I used a quart of homecanned
- 1 (16 ounce) can black beans, I used 1 pint homecanned
- 1 (16 ounce) can great northern beans, I used 1 pint homecanned
- 5 bay leaves
- 1 teaspoon dried parsley
- 1 teaspoon ground cumin
- 3 -4 dashes hot pepper sauce
- hot cooked rice
Directions
- In a large skillet, saute bell pepper, onion and garlic on oil until tender.
- Add sausage, broth, beans and seasonings.
- Cover and simmer for 1 hour, stirring occasionally.
- Discard bay leaves.
- Serve in bowls over rice.
