Sauerkraut Salad

Ingredients
- 1⁄2 cup vegetable oil
- 1 teaspoon celery seed
- 1⁄2 cup white vinegar
- 14 ounces sauerkraut, drained
- 2 cups celery, diced
- 1⁄2 cup onion, diced
- 1⁄2 cup green pepper, diced
- 1⁄2 cup pimiento, diced (optional)
Directions
- heat vinegar, sugar and oil till sugar is dissolved.
- Chop vegetables and add to sauerkraut.
- Mix well and then add the vinegar, sugar and oil.mixture.Stir to combine --
- Let stand 3 hours before using.
- Will keep for 2 weeks in refrigerator -- .
