Sauerkraut Cheese Ball

Yields: 2 large balls.
Ingredients
- 1 (16 ounce) can sauerkraut, drained
- 1 1⁄2 lbs grated cheddar cheese
- 1⁄2 cup onion, chopped
- 1⁄2 cup green pepper, chopped
- 2 hard-boiled eggs, chopped
- 1⁄2 cup soda cracker, crushed
- 1 tablespoon sugar
- 1⁄4-1⁄2 cup mayonnaise
- 1 cup walnuts, chopped
Directions
- Mix sauerkraut, cheese, onion, green pepper, eggs, crackers and sugar.
- Add mayonnaise to moisten.
- Shape into ball and sprinkle or roll into chopped walnuts.
- Refrigerate and serve with crackers.
