Sauerbraten Meatballs Weight Watchers Points Friendly

This is my version of a recipe I saw in a magazine. It combines the flavors of a traditional sauerbraten without the wait for the meat to marinate. It can be used as either a main course or an appetizer. This has been calculated for WW Points and is 4 points per serving. Show more

Serves: 6

Yields: 30 meatballs

Ingredients

  • 1  lb  93% lean ground beef
  • 1  medium onion, finely chopped
  • 1  egg white
  • 14 teaspoon salt
  • 18 teaspoon pepper
  • 16  small  gingersnaps, finely crushed and divided in half
  • 2  cups nonfat beef broth
  • 12 cup apple cider
  • 1  tablespoon sugar

Directions

  1. 1. Preheat oven to 400 degrees.
  2. 2. Combine meat, onion egg white, salt, pepper and half of the ginger snaps. Gently combine and form into 30 coctail size meatballs.
  3. 3. Place meatballs on a rack in a shallow pan.
  4. 4. Bake meatballs for about 15-20 minutes until browned.
  5. 5. Combine beef broth, apple cider, sugar and the rest of the crushed gingersnaps in a saucepan. Simmer over low heat, stirring often, until thick and smooth.
  6. 6. Add cooked meatballs to gravy and simmer for 15 minutes.
