Saucy Wenches Spicy Pizza

Try my saucy wench pizza, a new taste experience awaits you. A Thai inspired treat with a sweet chilli, ginger and lime sauce dressed with chicken, red peppers, mushrooms, black olives, green onion, mango and cheese. Garnished with fresh herbs and a drizzle of peanut sauce. You may substitute your favorite pizza dough recipe or store bought dough, if desired. Show more

Yields: 1 large pizza

Ingredients

  • Homemade Pizza Dough

  • 1  teaspoon active dry yeast
  • 34 cup warm water
  • 2  cups all-purpose flour
  • 34 teaspoon kosher salt
  • 3  tablespoons olive oil
  • 2  tablespoons olive oil (for bowl)
  • Pizza Toppings

  • 12 cup  sweet chili sauce
  • 2  tablespoons  sweet chili sauce
  • 1  tablespoon lime juice, fresh
  • 12 teaspoon fresh ginger, minced
  • 2  cooked boneless skinless chicken breasts, filets (no more than 1 cup-cut into bite size pieces)
  • 14 cup  sweet red pepper, sliced
  • 14 cup  canned mushroom, drained, thinly sliced
  • 18 cup black olives, thinly sliced
  • 1  mango, peeled, coarsely chopped
  • 2  green onions, sliced
  • 1  cup mozzarella cheese, shredded
  • 18-14 cup  fresh Thai basil, finely chopped (may substitute other type of basil)
  • 18-14 cup fresh cilantro, finely chopped (optional)
  • 18 cup  peanut sauce (optional)

Directions

  1. Homemade Dough.
  2. Combine the yeast and water in a small bowl, and let sit for 10 minutes.
  3. In a medium bowl stir together flour and salt, slowly, drizzle in the olive oil, next pour in the yeast mixture and stir until dough comes together.
  4. Lightly oil a large bowl and place the dough in bowl, cover with plastic wrap and place in a warm spot free of drafts to rise for 1 hour.
  5. In a small bowl add the chilli sauce, lime juice and minced ginger, mix well and set aside until needed.
  6. Assembling the Pizza:
  7. Preheat oven to 500 degrees and place oven rack in lowest position.
  8. If your pizza dough is too sticky to work with, gently add a little more flour until you can easily work with it.
  9. Lightly oil a baking sheet, and stretch the dough across it until it's fairly thin.
  10. Now we are ready to start assembling the pizza; start with the sweet chilli, lime, ginger sauce, spread it all over the dough, leaving a 1 inch edge.
  11. Now slowly sprinkle the following ingredients all over the prepared dough: chicken pieces, sweet red pepper slices, sliced canned mushrooms, sliced black olives, chopped mango, green onions and all the cheese.
  12. Bake for 12-16 minutes until cheese is melted and the crust is golden brown.
  13. Now top the pizza with the fresh basil. If using add the optional ingredients, add the cilantro and drizzle with the peanut sauce.
