Saucy Sausages

Ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 8 pork and herb sausages
- 14 ounces chopped tomatoes
- 1 green pepper, deseeded and chopped
- 2 tablespoons tomato paste
- 2 teaspoons English mustard
- 2 teaspoons white wine vinegar
- 1 dash Tabasco sauce
- fresh ground black pepper
Directions
- Heat the oil in a saucepan, add the onion, garlic and sausages and cook for 8-10 minutes, turning occasionally.
- Add the tomatoes, pepper, tomato paste, mustard, vinegar, tabasco and seasoning.
- Bring to the boil, then reduce the heat and simmer for 8-10 minutes, until the sausages are cooked. Serve.
