Satay

This is my favorite meal of all time! I got the recipe from my husband, who got it from his mom. She was Dutch-Indonesian and this was one of her family's favorites. It also works with chicken. Show more

Ingredients

  • 4  lbs pork
  • 34 cup soy sauce (Mr. Yoshida's Gourmet Sauce)
  • 3  large garlic cloves, finely mashed
  • 2  tablespoons olive oil
  • 14 teaspoon salt
  • 12 teaspoon pepper
  • 12  lemon, juice of
  • PEANUT SAUCE

  • 3 -4  teaspoons  smooth peanut butter
  • 14 cup butter
  • 12 teaspoon pepper
  • 12 teaspoon salt
  • 2  tablespoons soy sauce (Mr. Yoshida's Gourmet Sauce)
  • 2  teaspoons lemon juice (I use the other half of the lemon's juice)
  • 1  pinch  fried shallot

Directions

  1. Slice meat into 1 inch squares, set aside.
  2. MARINADE:
  3. In large bowl, mix soy sauce, garlic, lemon juice, olive oil, salt and pepper. Add meat, and knead marinade into the meat. Cover and let stand at room temperature for a minimum of one hour. Refrigerate if marinating longer.
  4. Place meat pieces on skewers, barbecue until meat is cooked. They are thin pieces of meat so it shouldn’t take too long. Remember to turn frequently.
  5. Serve over bed of rice with peanut sauce.
  6. PEANUT SAUCE:
  7. In saucepan, melt peanut butter and butter while stirring over low heat. After peanut butter is melted, add soy sauce and lemon juice, a little at a time to obtain the desired taste. After mixture is peanutty yet tart, you can add some salt and pepper to enhance the taste. Add the shallots.
